Methodology

The Roque Method

A working framework in five stages. It gives every engagement a clear sequence — from understanding the business to supporting what happens after the recommendations are delivered.

  1. 01

    Discover

Understand the business, its objectives, its guests and its challenges.

Conversations with owners and team, time spent in the operation, and a review of the information the business already has. The aim is an accurate picture before any recommendation.

  2. 02

    Define

Design a strategy and set clear priorities.

Translate what was learned into a small number of clear objectives and an agreed order of work, so that effort goes where it matters most.

  3. 03

    Design

Develop the concept, processes and the right solutions.

Shape the concept, the menu, the processes and the tools the business needs — always designed to be executed by the real team, in the real space.

  4. 04

    Optimize

Improve the operation, its efficiency and its management.

Refine recipes, procedures, costs and routines; remove what adds effort without adding value to the guest or the business.

  5. 05

    Implement & Evolve

Support implementation, assess progress and find new opportunities.

Stay close while changes are put in place, review how they are working, adjust, and identify the next opportunities as the business grows.

The Roque Method is the firm’s own working framework. It is not a certified or third-party standard.

Working principles

Executable over theoretical

Recommendations are designed for a full service, with the team you have.

Concept and numbers together

Culinary decisions and business decisions are considered side by side.

Clear priorities

Fewer, better-chosen actions rather than long lists that never get done.
